The filling meas...Thanks - it's a great recipe! The filling measurements depend on how many pies you're making. The pastry dough makes about 3 pies (top and bottom) in a regular sized ramekin. So the filling for that would be about:<br />2 carrots<br />1 parsnip<br />1/2 cup peas<br />1/2 cup corn<br />3/4 cup chopped artichoke hearts<br />1/4 cup flour (you can always adjust if it's too thick, or not thick enough)<br />3 cups stock<br />1/4 cup wine<br />squeeze of lemon<br /><br />It's a roundabout estimate depending on the veggies, you can add more stock and flour (mixed with a tad of water) if it's not thick enough or too thick.
